Atkins hesitation, 4

Take seven large eggs and the quartered heart of an adult bison and puree with 8 oz. of heavy cream, two tablespoons butter, and two cups shelled pistachio nuts. Sprinkle with nutmeg, black pepper, and shaved parmesan cheese. Top with a healthy dollop of sour cream. Serve in a tall glass with a side of steamed cauliflower.

So. 5 lbs. gone, 10 lbs. to go — though I’d be lying if I told you the menu wasn’t occasionally a bit offputting.

  2. Russ says:

Lose the cauliflower, and you’ve got something there.

The offputtingness is merely the secret ingredient that makes it all that much the tastier.

  3. Parker says:

    Pistachio nuts!!! Are you insane!

  4. Steve H. says:

When you get off Atkins, try that on a bed of pasta smothered in confectioner’s sugar.

    Thanks for mentioning me, J.!
